Pomegranate Summer Mocktail
One of the best things about summer is the delicious drinks and it can be hard to turn down frozen coffee, tall glasses of ice water and brightly colored cocktails even though we know they aren’t the best for us. While I believe in all things in moderation (think 80% making our best choices and 20% making the fun choices), having alternatives that are fun AND good for us is sometimes the best of both worlds!
This Pomegranate Mocktail Recipe is a delicious alternative that not only tastes delightful, but that serves the body in the best ways.
Ingredients:
1/2 cup organic Pomegranate Juice
2/3 cup ripened berries of choice (I love a mixed berry combo)
1/2 cucumber
Celery to taste
2 T fresh mint leaves
1 T fresh cilantro
Honey, coconut sugar or maple syrup to taste
Blend ingredients until smooth, adding water to create the consistency desired. Serves 2.
*Optional: Add 1/2 tsp of neem, manjistha, brahmi or amalaki to increase bitter quality.

Iced drinks heat the body and caffeine and alcohol are both very heating as well, so can aggravate pitta symptoms most during the summer (pitta time of year).
